Chinese food has a unique taste simply because of its flavours, especially ginger, garlic and soy sauce. Oh, I almost forgot, spring onions too!
There's no Chinese recipe that doesn't include spring onions. But the regular purple or white onions will suffice.
And so today, we will be looking at the Chinese Chicken Fried Rice.
Let's begin...
Ingredients
1/4 cup olive oil.
2 spring onions (medium).
1clove garlic crushed.
1 small ginger crushed.
2 eggs.
200g chicken diced.
200g peas.
200g shrimps peeled.
500g rice parboiled.
Generous drops of soy sauce.
Generous pinch of salt and black pepper to taste
1/4 cup water or chicken stock.
Method
1. Put the olive oil in a wok and add the garlic and ginger. Stir vigourously.
2.Add the chopped spring onions and sautee until translucent in colour. Remove garlic, ginger and spring onions and set aside.
3. Fry the eggs and scramble. Remove from heat. Then fry the diced chicken and shrimps seperately and set aside.
4. Put the parboiled rice in the work together with the garlic, onions, eggs, chicken and shrimps, and stir well together. Add the peas and corn, soy sauce, black pepper and salt to taste and add a little chicken stock or water, and stir well.
5.Cover and leave to simmer and cook for about 25 minutes or until the rice is tender but not mushy. Stir once or twice during this time.
6. Finally, give it one final stir and serve hot.
